- 500g Cauliflower, approx., boiled, chopped
- 400g Cheese, grated, possibly light
- 2 egg(s)
- 2 Tea spoons Garlic, freshly chopped
- 1 teaspoon garlic salt
- 2 Tea spoons Herbs, Italian, of your choice
- something Olive oil, optional

Remove all the stalks and leaves from the cauliflower and cut the cabbage into small pieces. Chop in the food processor until it looks like semolina. If you don't have a food processor, you can try it with a cheese grater, a sharp knife (shave off the whole head) or a magic wand (but not too hard, you don't want it to be a puree).
Place the chopped cauliflower in a microwave-safe bowl and cook for about 8 minutes. There is no need to add water as the natural moisture is sufficient. I don't know how to do that if you don't have a microwave. I suspect it can also work with thawed frozen cabbage or with previously cooked cabbage. I didn't have enough test options back then.
A large cauliflower will produce 3 - 4 "cups" (about 250ml per cup). One cup is required per pizza for 2-3 people. Leftover cabbage crumb batter can be stored in the fridge for up to 1 week.
Preheat the oven to approx. 230 °C top/bottom heat. Line a baking sheet with parchment paper or baking foil. In a bowl, mix 1 cup (approx. 200 g) cauliflower, an egg and approx. 200 g grated cheese until smooth. Add the herbs, garlic and salt. Mix everything vigorously.
There should be a mash here. At first I thought it would never work out ... after all, it has a completely different consistency than yeast dough, but because of these doubts you have to go through and just keep going.
Spread the dough on the baking sheet and spread it out with your hands into the desired shape and thickness. If you like, you can brush the surface with olive oil to help brown it. Bake in the hot oven for about 15 minutes (until it looks deliciously browned).
Remove from the oven and brush with pizza sauce. Then top as desired (do not use raw minced meat, however, as the pizza is only to be baked). Put the whole thing back in the hot oven for about 10 minutes more, until the cheese has melted or is browned.
