Vegetarian spinach and vegetable lasagne with tomato sauce |
Ingredients for 6 portions
- 1,200g Leaf spinach, frozen, with cream
- 4 large carrot(s)
- 14 m.-large mushrooms
- 2 large onion(s)
- 10 tbsp milk
- 1 pack Herb cream cheese, approx. 100 g
- 2 tbsp. vegetable broth powder
- 4 Garlic cloves)
- salt and pepper
- chili powder
- 6 tbsp butter
- 4 tbsp flour
- 1,000mL tomatoes, happened
- 300ml sweet cream
- 2 package Lasagna plate(s)
- 400g cheese, grated
Preparation
- Working time about 25 minutes
- Rest time about 10 minutes
- Cooking/baking time approx. 45 minutes
- Total time about 1 hour 20 minutes
Cut the carrots, mushrooms and onion into small pieces and first sauté the diced onions in a pan until translucent. Then add the remaining vegetables and sauté briefly. Add the milk and heat the creamed spinach in it until the leaves are no longer frozen and the cream sauce has thickened slightly. Now add the cream cheese and the vegetable stock powder and mix well. Simmer for five minutes until the sauce has thickened nicely. Finally, press in a clove of garlic and season with salt, pepper and chilli. The spinach mixture can be quite spicy, since the spinach "swallows" quite a lot of salt when baking.
In a separate saucepan, heat the butter until completely melted. Add the flour while stirring and mix until smooth. Now add the tomato passata while stirring constantly, then pour in the cream and bring everything to the boil briefly. Squeeze in a clove of garlic and season with salt and pepper. You don't have to save on salt here either.
Thinly cover the bottom of a casserole dish with the tomato sauce and spinach and now alternately layer the lasagne sheets, spinach mixture and tomato sauce in it. Finish with the sauce and sprinkle all over with grated cheese.
Bake in a hot oven at 180 °C for approx. 30 minutes. After baking, leave in the switched-off oven for another five to ten minutes so that the lasagne stays in perfect shape and doesn't run.
Tip: It is also very tasty to place finely chopped feta slices on one layer before the next layer of lasagne sheets comes.
