Colorful summer salad

Ingredients for 8 portions

For the salad:

  • 400g Sweetcorn, frozen
  • 400g beans, green
  • 2 Bell pepper(s), red, deseeded
  • 2 Bell pepper(s), yellow, seeded
  • 2 Onion(s), red, peeled
  • 2 cucumber(s)
  • For the dressing:
  • 8 tbsp olive oil
  • 4 tbsp Apple Cider Vinegar
  • 2 Tea spoons salt
  • ½ tsp Pepper, black, freshly ground
  • 2 small Federation Coriander, finely chopped

Preparation

  • Working time about 15 minutes
  • Total time about 15 minutes

Blanch green beans and corn in boiling, salted water for 2 minutes. Drain, rinse with cold water and drain again. Set aside in a large bowl.

Roughly chop the vegetables to fit into the dicer feed tube.

Attach the dicer to the front of the stand mixer on the low speed connection. Set speed level 3. Place a bowl under the spout to catch the diced vegetables.

Place the prepared vegetables into the feed tube and chop. Add the finished diced vegetables to the bowl with the beans and corn.

Mix all the ingredients for the dressing together and add to the vegetables. Toss the vegetables in the dressing until well combined.

Let stand for 10 minutes before serving, so that the aroma can unfold
